Life had thrown me a lot of lemons and it wasn’t until I discovered that changing my food was connected to everything else I was able to turn those lemons into lemonade!
Changing my diet was the LAST thing I was thinking about. I had just been through the loss of my youngest daughter, 7, and graduated from nursing school. This is after a complete life overall where I went from being a stay at home, homeschooling mom to divorced, working mom.
During my child raising years, I had developed types 2 diabetes and was trying to reduce the amount of stress and worry of raising three kids while managing school, work, activities, and family time.
I had come across the documentary, Forks over Knives because I was worried that my daughter, who was going through a vegan phase, wasn’t getting enough protein. I had seen Dr. Furhman’s Nutritarian PBS special and thought she should watch it. She challenged me to watch FOK and because I wanted to prove her wrong, I watched it.
It was very compelling and the information was in alignment with my experiences. Still, I was skeptical. Also, I liked meat and cheese. But while I was a nursing student, I had seen what late stage type 2 diabetes looked like, as well as heart disease and many other chronic illnesses. If what FOK documentary said was true, it was worth a chance to avoid the long term damage of chronic illnesses. I was immediately interested in what Dr. John McDougall had to say because he mentioned potatoes and I really like potatoes.
I started researching Dr. Colin Campbell and Dr. Caldwell Esselstyn and many other plant based Drs. I got caught up in being vegan and ate oreos, french fries and meat substitutes. This did not improve my health. As I learned to do better, I kept adjusting my food. I started to lose weight and thought it was working. But, medical tests and daily blood sugar sticks were still not in the normal range. Add in that I started dating and had to navigate eating out which is not always easy to do. But I stuck with it and kept returning to a plant based diet because I could feel the healing effects and knew this was important to get right.
I met a special someone and invited him to a plant-based potluck as our first official date. On his own he decided to join me on this plant based adventure and he was so impressed, the two of us have been on this journey ever since. We took the McDougall 12 day course and that was when we went from being 80-90% WFPB compliant to 100% starch centered WFPB. This is not about perfection, it is about empowerment. It is not about denying emotional connections to food, but embracing them and feeling enjoyment and appreciation when you do choose to indulge.
Choosing to follow a starch centered diet has changed my life in all the best ways! I was finally able to lose 40lbs, and have more energy, throw away my meds and gain back my memory!
When I am not talking about food, I enjoy a variety of activities, including yoga, golf, going to concerts, dancing, learning to play ukulele and my favorite, learning about glass fusion and making pretty jewelry!
